I remember seeing Peter finishing his bonding by sliding a wooden palet on the leather with a paper over to protect it, is there a reason behind this method that seems more time consuming than just using a roller?
Is there any benefit ?

The reason I use that method instead of a roller is because a roller can stretch the leather. Think of pizza dough and using a roller. It’s spreads it out and makes it bigger.
One needs to make sure there is no air in between the leather and the bonded. Also to make sure there’s good adhesion between the two and no wrinkles. As for the paper this prevents the leather from sticking to the bonded leather prematurely.
